Garlic Salmon with Turmeric Cauliflower Rice

A functional meal at its finest. I love aiming to create meals like this delicious garlicky salmon dish that not only tastes amazing but also serves a purpose once it has been ingested! Instead of just eating, you will be supporting your body in reducing inflammation, enhancing cognitive function and creating a beautiful skin from the inside out! Food is medicine!

Healthy Facts:
In this day and age, the standard diet consists of an overabundance of omega-6 fatty acids, typically found in meats, poultry, safflower oil and vegetable oils. Omega-6 does have an important role in the body, but when the ratio of omega-6 exceeds omega-3, it creates the perfect environment for systemic inflammation, which is becoming recognised as the root of almost all disease manifestations, from depression to obesity. The omega ratio in modern diets is estimated around 20:1- 30:1 omega-6 to omega-3, however, the body craves a ratio closer to 1:1 to keep inflammation low. Therefore, incorporating oily fish high in omega-3 such as salmon, sardines, and mackerel can be beneficial for balancing out this ratio, and lowering systemic inflammation.

The ingredients

  • 2 Salmon fillets with the skin on*
  • 4 Garlic cloves
  • 1 Lemon
  • Sea salt and freshly ground black pepper
  • ¼ cup Ghee (clarified butter- to fry in), grass fed butter or coconut oil
  • ¼ cup chopped dill to serve
  • 1 head of cauliflower
  • 1 Tablespoon extra-virgin olive oil
  • ½ teaspoon turmeric powder
  • Sea salt and pepper to taste

Method

  1. Place salmon in a large bowl, squeeze over lemon juice, crushed garlic and season with salt and pepper. Cover and place in the fridge to marinate.
  2. Cut cauliflower into large chunks, and either add to a food processor and pulse until it resembles rice (about 2-3 mins). Alternatively, use a cheese grater to grate into a large bowl if you don’t have a food processor at home.
  3. In a large pan heat oil on medium heat. Add cauliflower, turmeric, salt, and pepper.
  4. Sauté for around 10 minutes, or until tender.
  5. Whilst cauliflower is cooking, place a large skillet or fry pan on high heat, and melt ghee. Remove fish from the fridge and add to the pan, skin side down, along with the lemon/garlic marinade. Fry for 2-3 minutes or until fish has ‘unstuck’ itself to the pan, then flip for a remaining 2 minutes or until cooked through.
  6. Serve fish on a bed of cauliflower rice and a sprinkling of dill. If you want to incorporate more greens you can add some steamed green beans or salad.
