Apple Pie Bircher Muesli

This deliciously simple recipe is one that you can turn to during a week of early mornings. I recommend making a large batch on a Sunday night so all you need to do is serve it in a bowl, or pour some into a jar that you can bring to work!

Healthy Facts:

Oats are an excellent source of complex carbohydrates, which ensures sugar is not absorbed into the body too rapidly. The fibre in oats improves the metabolism of glucose, allowing your blood sugar levels to stabilise. This is also essential for those wanting to lose or maintain their body fat percentage, as it keeps you feeling satiated for longer. Beta-glucans found in oats are also capable of improving the body’s immune system defence, this is one way good nutrition can stop you from becoming sick! 

INGREDIENTS (2 Serves)

1 cup of rolled oats

1.5 cups milk of choice (I use almond or coconut milk for a hit of beneficial fats and protein!)

1 grated apple 

1 handful of raisins 

2 Tablespoons of chia seeds 

1 handful of roughly chopped nuts (Macadamias, almonds or walnuts work amazingly!)  

1 teaspoon cinnamon powder

Optional:

Replace raisins with goji berries for a lower sugar version and an antioxidant hit!

INSTRUCTIONS

  • Mix together all ingredients in a container or large glass jar. 
  • Cover with a lid and place in the fridge to soak over night. 
  • Give the Bircher a good stir in the morning and then serve as is, or try adding a dollop of coconut yogurt and fresh berries.
