Eat like a Ballerina

Activated Cinnamon Crunch Almonds

Nuts are an amazing snack, rich in healthy fats, fiber, protein and minerals including zinc, magnesium, and calcium. However, nuts also contain a natural chemical called phytic acid and enzyme inhibitors that can interfere with absorption of these nutrients. Extra pressure can also be placed on the digestive system when large amounts of raw nuts are consumed, which contributes to uncomfortable digestive symptoms such as bloating, heaviness and nausea! In order to combat this, it is useful to activate them!

The ingredients

  • 1 cup of almonds
  • 1.5 cups of filtered water
  • ¼ teaspoon sea salt
  • 1 Tablespoon maple syrup
  • Cinnamon

Method

  1. Place nuts and salt in a large bowl and cover with water. Soak overnight or during the day (7+ hrs) or if you want to speed this process up, leave for a minimum of 1-2hrs.
  2. Preheat the oven to the lowest heat it will go (max 60 degrees Celsius, this ensures essential fats and nutrients are preserved).
  3. Strain the nuts and rinse well, make sure the nuts a rid of all excess water (you may need to use a paper towel to blot them dry).
  4. Coat in cinnamon, maple syrup and a pinch of sea salt until evenly coated.
  5. Spread out on a lined baking tray and place them in the oven.
  6. Bake for 2 hours, turning occasionally to coat and dry evenly.
  7. Cooking may vary depending on your oven and how crispy you want the nuts, the dryer the are the longer they will last!
  8. Store in the fridge for up to 1 week.
